Serves 4
  • 1 tbsp olive oil
  • 1 clove garlic, crushed
  • 1 medium (150g) onion, sliced
  • 2 medium carrots (240g), cut into 1 cm slices
  • 3 medium beetroots (500g), peeled and chopped
  • ⅓ cup (80mL) balsamic vinegar
  • ⅓ cup (75g) brown sugar
  • 3 cups rocket (60g)


Prep time       Cook time 
  1. preheat oven to 180°c/160°c fan forced.
  2. heat oil in a medium saucepan, add onions and garlic, cook for 3 minutes, add carrots and beetroot, cook for further 5 minutes. add balsamic and sugar, cook for 5 minutes.
  3. transfer mixture to a baking dish to oven and bake for 30 minutes. cool slightly.
  4. toss warm vegetables with rocket.
