  • ½ cup (75g) self raising flour
  • ½ cup (80g) plain wholemeal flour
  • 1 tsp baking powder
  • ½ tsp mixed spice
  • ½ tsp ground cinnamon
  • 1½ cups (135g) UNCLE TOBYS Traditional Oats
  • ½ cup (60g) almond meal
  • ½ cup (75g) chopped dried apricots
  • ½ cup (100g) chopped dried figs
  • ¼ cup (35g) sunflower seeds
  • ½ cup (125mL) apple juice
  • ¼ cup (60mL) vegetable oil
  • 1 egg, lightly beaten
  • 2 egg whites, lightly beaten
  • 2 tbsp honey


Prep time       Cook time 
  1. preheat oven to 190°c/170°c fan forced. line a 28cm x 18cm lamington pan with baking paper.
  2. sift flours, baking powder, mixed spice and cinnamon into a large bowl. add UNCLE TOBYS traditional oats, almond meal, apricots, figs and sunflower seeds.
  3. combine apple juice, oil, egg, egg whites and honey; mix well. pour over dry ingredients, mix until just combined.
  4. press the mixture evenly and firmly into the prepared pan with the back of a spoon. using a sharp knife, mark 12 bars into the surface.
  5. bake for 30 minutes or until golden brown. remove from the oven and allow to cool before cutting into bars.
